I have been testing software with ActivityPub for a while now. My two cents:
Friendica (Facebook-like interface, simple to use and administer, great at following everything, from micro-blogs to forums). My setup broke on the first update, and I had to spend some hours figuring out what happened. Deleted after a month.
Hubzilla is complex for both end-users and administrators. It feels powerful, but it can also feel like doing way too much and everything rather poorly. It's a bit like Friendica on steroids. ActivityPub got weird and semi-broken; after a few weeks, I did not bother figuring out what was wrong and uninstalled it.
NodeBB—I am testing it right now on https://nodebb.plaureano.nohost.me/forum/ (feel free to check it out), and I am impressed beyond words. This thing seems to be leaps and bounds better than Friendica and Hubzilla.
While I proceed with the "self-hosting apps safari" and test everything with good activitypub support, I will continue hosting Lemmy, Mastodon, and Pixelfed for the mobile apps. These three are the best in their particular use case, but again, I am very impressed with nodeBB.
I thought about using friendica, but I wasn't convinced to use it. NodeBB I think it's a good option to create a forum, but not for what I'm looking for. Thanks for the suggestion
