This is a public forum for a discord server of friends who are all vegans and cook at home for their families.

We are here to share some inspiration, to see what others are doing and to stay engaged in something that is both our hobby and a required task.

This forum is not a "food porn" community, a recipe book or a place to teach you how to cook. It is a place for people who already cook to meet other people like themselves and provide on topic support and conversation as much as long distance friends on the internet can do. We are doing show and tell about what we made and we don't care about its instagram worthiness.

Veganism isn’t a diet but I have to eat every day. This is for the vegan home cooks. Anything non vegan will be deleted.


Rules

1. Be Vegan.

If it is not vegan it doesn’t belong here… or anywhere.

2. Post home cooking.

No restaurant or fast food. This is what every other vegan space is about and we don’t want to promote any large or small business tyrants.

3. Join the Discord

We’re an active community of vegan home cooks that like to talk about what we are cooking today.

4. Do not make any rude comments or digs at anyone’s food, cooking style, specific diet, restrictions or technique.

While we are all cooks, we all have different requirements and we’re not asking for help, we are doing show and tell.

5. Do not use trademarked brands

Use generic names. We’re cooking with tvp not whatever business brands it and we’re not trying to turn comrades into billboards. No plant-based vegan-pandering capitalist crap like Impossible, Beyond, Dairy-company owned “vegan” cheese.

6. Do not ask for a recipe without otherwise engaging the OP (No posts that are just “recipe?”)

We are not food bloggers. Sometimes we're excited to share and will tell you the recipes we used but this isn't required. Instead try doing your own research and tell us what you learned and we can talk about it.

7. Careful with making unasked for suggestions.

Sometimes we like to hear suggestions but you should be nice about it and know the person you are making suggestions to. We are in the discord and you can get to know us that way. If you are just a visitor from the fediverse, this isn’t the place for you to start telling other people what to do.

8. Grown Ups Only.

Cooking for our kids is great, Acting like one is not. While this isn't a community for adult material we expect everyone who participates to be an adult and act like one. Please follow the Anarchists Code of Conduct. No profane usernames allowed.

  • 2 cup oats
  • 1/2 banana
  • 1 cup plant-milk (almond)
  • 1/2 cup water
  • spices (optional) (cinnamon, ginger, pumpkin spice, almond extract, vanilla extract)

1.) Combine all in blender and blend until smooth. 2) Pour into waffle maker (Dash 4" waffle maker from eBay) 3) Profit?

I just used dried refried bean flakes and reconstituted them and smeared them on some microwaved store brand corn tortillas, rolled them up and airfried them until crispy and dipped them in my home made table salsa. This is my work desk.

I simmered two cans of diced tomatoes and some red wine for a long time, then added nooch and Italian seasoning then blended it and served over pasta. I microwaved a can of cannelini beans with some diced carrots and fresh lemon juice from my tree and nooch for a 8 minutes until the carrots were soft. The spinach was frozen and also microwaved with salt, pepper, lemon juice and some diced local jalapeño chilis that are hiding in there.

I cooked a can of black beans and tomatoes together with some cubed carrots and simmered until the carrots were soft and the tomatoes were cooked, I added italian herbs and nutritional yeast and some whole wheat flour for some thickness

I pressure cooked yellow potatoes until they were done then shocked them in ice water to de skin them, I then mashed them and mixed it with soy milk, salt and dried dill

I microwaved spinach and kale together in a covered glass dish until it was tender then added pepper, nutritional yeast and fresh lemon juice

Baked Aloo Gobi (Dump-and-Bake)

Ingredients:

  • 1 medium cauliflower, cut into florets
  • 2 medium yellow potatoes, cut into bite-sized cubes
  • 2 tbsp water
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 1 tsp red chili mirch
  • ½ tsp mustard seeds
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp ground ginger (or fresh minced ginger)
  • 1 tbsp lemon juice
  • ½ tsp mustard seeds (optional, for extra flavor)
  • ½ cup tomatoes, cut (optional, for added moisture)
  • Fresh cilantro for garnish

Instructions:

Preheat Oven: Set your oven to 400°F (200°C).

Prepare Veggies: In a large bowl or directly in a baking dish, toss the cauliflower and potatoes with water.

Season: Add all the spices, salt, and lemon juice. Toss well to coat everything evenly.

Bake: Spread everything in a single layer in a baking dish. Cover with foil and bake for 25 minutes.

Uncover & Roast: Remove the foil, stir the vegetables, and bake uncovered for another 20-25 minutes, or until the potatoes are tender and cauliflower is golden.

  • 2 cups AP Flour (I used whole wheat)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1/4 tsp all spice
  • 1/4 tsp clove powder *1 tsp vanilla extract
  • 3 tbsp soy milk
  • 1/2 cup cane sugar
  • 1/2 cup light molasses (do not use blackstrap) (I used 1/4 cup light molasses, 1/4 cup date syrup)
  • 1/4 cup + 2 1/2 tbsp roasted almond butter

Preheat oven at 350F.

Put dry ingredients into a large mixing bowl and add wet ingredients.

Mix well until a dough forms.

Cover dough and place in the fridge for at least 1 hour or overnight.

Roll dough out until it’s 1/4” thick on a floured surface and cut cookie shapes into it.

Bake cookies for 11 minutes (crispy on the edges) or 8 minutes (soft cookie).

I felt like mushrooms were not sufficient, so I added tofu (which was too soft, I think maybe soy curls would have been better?). Also didn't have red wine, so I used white wine + red wine vinegar + raisins blended in water to replace the red wine, lol.

Enchiladas.

Made some seitan “ground beef” cooked some squash, onions and mushrooms up. Mixed it all together with a bit of refried beans to stick it all together, wrap em up, slather with green enchilada sauce, top with cheez. So damn good.

Rice and lentils in the rice cooker (at the same damn time) and microwave veg.

Super simple stuff.

we soaked dried chickpeas overnight, cooked them, and made our first hummus in two flavors: natural with tahini, garlic, cumin and olive oil, and a beetroot flavored one, which took an amazing color.

My variation on Bibimbap.

Fried mushrooms/tofu/bell pepper/onions, basmati rice, kimchi. Topped with green onion, sesame seeds and crushed chilli flakes.

The sauce is a mix of soy sauce, sesame oil, hoisin sauce and a potent hot sauce. Mixed with more sesame and chilli.

Usually I season the tofu in that sauce before frying it, but I was tired and hungry.

All the community subscription forms at https://vegantheoryclub.org/communities redirect to this community! I am not very good at deep frying, and made some mistakes. Probably I could do these in my oven pretty well. Magnificent spicing to the batter, never paying for overpriced and bland nuggets again.

Doing 3 (one offscreen) different approaches to chickeny seitan. This is using vital wheat gluten vs washing.

One is just gluten and water, wrapped into spirals Chinese style.

One is braided, adding some ACV based on this washed recipe. The gluten seems underdeveloped here, it should be smooth. I think I need to be careful mixing it instead of just a quick stir.

And one is just the seitan part of this 'tender' recipe which I'll taste a small bit of before battering for other experiments.

Previously I've noted that washed flour tastes fine but VWG tastes bitter. Alledgedly ACV improves? Spirals will test without ACV but with washing/soaking.

Will update in a couple of days with results.
