even with that the resulting cheeses would be leagues above american cheese-like product.
in some cooking a little bit of natrium citrate allows for a stable smooth texture integral for some recipes while allowing you to use better tasting cheeses
I'll add a slice of American cheese to whatever good cheese I'm using for a sauce
