I assumed it was just the company pulling the plug on that particular AI personality, maybe I'm thinking of something else

You're giving AI too much credit. There are real workers behind every popular vtuber, at least right now

Something as simple as a (virtual) Youtuber seems simple enough even for AI

It may be possible eventually, but we ain't there yet. A big problem is having consistency across sessions, especially if the vtuber interacts with the audience in a natural way. Streamers need to interface with the culture of their followers in a reactive way to meet the current standards, so it'll take time. It's not like a 1 on 1 convo with a single user. They also tend to play games and do interactive tasks which add even more challenges.

Like I said, this all seems possible, but not as straightforward as you imagine.
