It makes them taste better and improves the texture, at least in my opinion.

Crepes are basically super-duper eggy pancakes.

You get fluffier scrambled eggs with a small amount of water. Milk holds the egg together more, so they get clumpy.

True - scrambled eggs the right way is you start making an omlette and mess up and just smash it all while going "^nnnooooooooooooooooooooooooooooo^ OK, I guess we're having scrambled eggs, then."
