Cetacean ops isn't necessarily dolphins. In fact I don't think we ever see dolphins in star trek cetacean ops. Just blue whales and beluga whales.
We don’t see dolphins afaik, but in tng they do reference there being dolphins specifically with the one door labeled “Tursiops Crew Facility“
Star Trek Prodigy S2 E1 mentions dolphins in cetacean ops, I don't know if they show them though (I just started watching)
