If you ever have leftover sweet potato from the day before, I recommend making sweet potato pancakes!

Recipe for the sweet potato pancake?

[–] Nacktmull@lemmy.world 3 points 4 days ago (1 children)

Sure, here you go:

The sweet potato mash was already seasoned from the day before, salt ,sugar, lemon juice (not sure if lemon actually made it better), red chili pepper flakes and garlic. I just added two eggs and some flower plus some baking powder, so it would pancake properly. To achieve a uniform round shape and to make flipping easy, I used a set of two identical tiny pans.

Thank you, it's very easy, I'll definitely try it

Oh wow, I love spinach, but never tried it as a curry sauce. That should balance nicely...

Thanks, it was indeed a good pairing resulting in a nice contrast of flavors.

Oh you’ve been missing out! Palak paneer is delicious. You can obviously omit the paneer and do something else instead.

Whups; I should clarify that I've never cooked it myself. I like Palak Paneer as an occasional treat, but the store-bought stuff around here is too salty, plus I don't really need the cheese as an aging, somewhat out-of-shape bloke.

Unfortunately I don't have many of my Indian spices / whole seeds in stock these days. Well, I mean... some cumin seeds, a dwindling bag of Panch Puran, and a couple containers of Ghee is about it, that is.

I've never encountered palak in the store, though I've had it at some restaurants. When I make it myself I tend to do a vegan version, replacing the paneer with a medium firm tofu. It's not quite the same thing, but I also think tofu is delicious so...

Wow. Did you follow any recipe? I love this

Thank you! There was no recipe. All I had was some sweet potato mash from the day before and a craving for leafy greens.

The spinach curry was made by frying a large amount of onion, garlic and (mild) fresh green chili pepper in neutral oil. I also added several spices I had lying around, not sure anymore, certainly salt, cumin and black pepper, probably some Indian curry spice mix too. Reduced a can of coconut milk (10 min). Added spinach and reduced coconut milk to onion/garlic/pepper mix and boiled a little more. Used immersion blender to achieve a thick, creamy, sauce like texture, without using any binding agents.

Garnish is white and black sesame, don´t be lazy like me, roast your sesame! That way it will be a flavor component, not just a nice look.
