Far Cry 5. It's probably the only game I've played that has the same songs written in totally distinct music styles. Each song, like "We Will Rise Again", is written as:

A church hymnal (men and women's mixed chorus)

A folk song (bluegrass inspired, fiddles, acoustic guitars, and steel harps)

An ethereal rendition by Hammock that evokes the "bliss" part of the game world that the character Faith rules.
It's amazing that all three of these songs are the same in lyrics and meaning, but their execution is completely different and had very different emotional feels as a result.
The songs from the first Life is Strange just hit different. Paradise Killer OSTs are also bangers
Child of Light, Hades, Bastion, Icewind Dale, Dragon Age (any of them really), Heroes of Might and Magic 3-5, Dead Cells, Endless Legend, Pillars of Eternity, Pokemon Violet. Also Warframe, especially from The Second Dream and further period.
For me it has to be a mix of doom 2016 the witcher 3 and chrono trigger. So many good soundtracks between them.

Sim City 4 is definitely in my top five - love the chilled out jazzy stuff. Also, this is kind of out there, but does anybody remember the Harry Potter RPGs on gameboy color? Those had some great magical 8-bit tunes!

I don't expect to many people to have played it but Demon gaze has a soundtrack that just hits my adhd brain really nice, that and the 2nd game
What immediately comes to mind are Final Fantasy IV and Castlevania Symphony of the Night.
BLOODBORNE
Guild Wars 2
I think my absolute favorite that I haven't seen here is Gris. This game is absolutely beautiful as is the OST.
Definitely the Halo games for me. I think Halo 2 would be my fav.
I also just really like the music from Sonic. Sonic Generations had a great OST.
Silent Hill 1 to 4 by Akira Yamaoka. Atmospheric and dreamlike.
Shadow of the colossus by Kow Otani. Epic and mystical.
That one single song that played on the load screen of Boiling Point - Road to Hell. It was incredibly good and I still listen to it from time to time. Boiling Point Road to Hell Main Theme
- Digital devil saga: The tracks brings me to a very cozy dystopia everytime
- Mega man zero 2: The sound track of the opening stage is just so damn good
- Ghost trick: Can't wait for the new arranged version for the remake
Star Control 2. 4 musicians contributed without collaborating directly, resulting in many creative alien races having unique and memorable theme music.
a lil bit of payday
The Trine series is an underappreciated masterpiece. I've never heard so many waltzes in a game before.
Genshin Impact's soundtrack is also gorgeous.

It’s got to be Chrono Trigger and Chrono Cross, and really everything by Nobuo Uematsu.
Also you can’t go past Koji Kondo. Ocarina of Time is a great example of how talented he is.
Hellblade: Senua's Sacrifice is surprisingly good. Surtur's theme is one of the best boss themes ive ever heard. I also really like using the Battle Brothers ost for my Pathfinder games.
The Firewatch OST is pretty good and emotional
In most games I turn off the music pretty quickly so the ones where I don't must be my favorites.

Heroes of the Storm. Great originals and lots of reworks of favorites from other Blizzard games. I must admit that I turned it off eventually because I play better without music but I've listened to those tunes for hundreds of hours over the years.

Crypt of the Necrodancer, which is a good thing since it's a rhythm game :)

The Isaac and VVVVVV music fit the games really well.

The digital version of the Ascension deckbuilding game has some really nice art and music. My favorite is the Dreamscape stuff.
Edit, almost forgot, lots of favorites from the 8-bit home computer days (Spectrum, C-64). From console Earthbound was memorable.
MGS series soundtracks are pretty dope.
Mother soundtrack had been in the rotation for some time! "Fallin' Love, and" forever favorite.
