I defeated the first sinner and was wondering why hornet was put outside the chamber instead of like normal the bench after being defeated herself.

If it was a dream fight, I would have expected to be 'revived'/woken up right in front of the statue as it happened in original HK, not outside.

So any lore reason for that? Only thing I can think off is that the sinner puts hornet there, which is kind of hilarious to me. 'You failed, I don't want garbage inside my chamber'.

I have defeated the cogwork dancer but not got any of the 3 melodies yet. So if it gets explained later, I'm fine with waiting, don't spoiler please.

Is it possible you're reading into it too much? It could be an accidental inconsistency. Otherwise, not sure mate sorry

Could be, I thought about that as well, since it doesn't really make sense. But it would be strange, since they would need to specifically program it that way instead of just normally respawning at the bench.
