I use OpenBoard most of the time and it's good if you are more privacy focused.

If you install a fork of it with that feature, yes. I personally use this fork: https://github.com/erkserkserks/openboard

Totally agree. You can customize it a load. It has a ton of functions even local spellchecking once setup

Haven't seen unexpected keyboard mentioned. Been using that for a few months now. Lots of keys, not many other features. With a compose key, it would almost be perfect. Hackers is my backup keyboard.

I use AnySoft Keyboard. It is very configurable and has a lot of language options.
