Have you checked out the FuriPhone FLX1? I think people don't talk about it much, and I don't know why. To me it seems the best option

Since you've talked about OpenMW + mods, do you have any recommendations for someone who played Morrowind on Windows years ago and would like to play it again on Linux via OpenMW? What works, what requires tinkering? Any mods that you recommend?

AI is just a technology, it does not "grow" into anything by itself and it's neither good or bad intentioned, and that's because it does not have any intentions
The worry about "Alignment" and such is mostly a TESCREAL talking point (look it up if you don't know what that is, I promise you'll understand a lot of things about the AI industry).
