El Yucateca is the best. I especially like the green one.

So flavorful, and actually has some heat to it, unlike that ketchup known as Tapatío, Cholula, Tabasco, etc.

Green sauces are made with tomatillos/green peppers/etc. and has a more vegetal flavor, while red sauces are made with tomatoes/red peppers/etc. andtastes like tomatoes, roasted red peppers, and the like. Spice level is irrelevant. Put more simply, the green sauces taste "green" and the red sauces taste "red"; and are better on different things. The good ones are hot as hell regardless of color.

I fire roast my tomatillos and serranos before making my salsa, that’s why it’s green and hot as hell, and also doesn’t taste anything like raw veggies.

As a Mexican this makes perfect sense for me. And the "jungle juice" or "medicine" thing is just completely ridiculous. I guess it's just my general experience with sauces. Heck I'm writing this at a fondita (mexican folk restaurant) and the spiciest one is definitely the green one.

Its the fuckin habanero that will always get you. The red one is always milder sauce and the dark red one is always chipotle or mole, which are not spicy.

Think of the colour of the sauce as more of a traffic light colour for when it comes out the other end.
